It's a cool and rainy day here, so I decided to bake muffins with my daughter while my son is napping today. This is one of our favorites to make...Banana Raisin (chocolate chip today since we're out of raisins) Muffins. These are great because you can freeze them. I also like them when you go to the store and find bananas that are pretty brown and marked way down. Or in this case we didn't make it through our bananas in time and they turned and then no one in this house wants to eat them....those bananas are perfect for this recipe. So, here's the recipe.
1/2 C. Splenda
2tsp. baking soda
1/2 tsp. salt
3 C. Flour
1/2 C. Olive Oil
1/2 C. Milk
5 bananas, mashed
2 tsp. vanilla
2/3 C. raisins or chocolate chips
Preheat oven to 375. Mix sugar, baking soda, salt & flour. Add oil, milk, bananas & vanilla. Mix until flour mixture is moist. Fold in raisins or chocolate. Pour in muffin cups & bake 20 minutes. This makes about 2 dozen muffins. Yum!
